Bentley Drink

Serves 6-8

1/2 cup lime juice
1/2-1 cup water
2/3-1 cup granulated sugar
(approximately) 2 bottles club soda (10 oz bottles)
2-3 tsp aromatic bitters cherries for decoration

METHOD
1. Combine lime juice, water and sugar, stir until sugar dissolves
2. Add club soda and pour into serving glasses with crushed ice
3. Add bitters and decorate with cherries Serve immediately


Ginger Beer

Serve 16 or more
1 lb ginger
8 cup water juice and peel of 1 lime
4 cups granulated sugar or to taste
1 cinnamon stick
4-6 cloves

METHOD
1. Wash, remove skin and grate ginger
2. Place in a large bottle with about 8 cups of water and juice and peel of 1 lime
3. Leave in the sun for 1 day. Next day, drain and sweeten
4. Pour in clean bottles and place in the refrigerator
Allow to settle for 2 days If too strong dilute with club soda or water.


Ponche De Creme

Serves 12
6 eggs
peel of 1 lime
3 cans evaporated milk (low fat) (15 oz)
1 1/2 cans of condensed milk (14 oz)
1 tsp aromatic bitters
1/2 tsp grated nutmeg
1/2 cup rum or more

METHOD
1. Beat eggs and lime peel until light and fluffy
2. Add evaporated milk
3. Sweeten to taste with condensed milk
4. Add bitters, grated nutmeg and rum according to one's taste
5. Remove lime peel and serve with crushed ice



Seamoss

Serves 6
2 oz dried sea moss
2 tsp lime juice
2 cups water
4 cups evaporated milk
1/2 cup granulated sugar to taste
2 tsp aromatic bitters

METHOD
1. Soak sea moss with lime juice and water overnight
2. Drain well and boil with 2 cups water until sea moss resembles a mass of jelly. Cool.
3. Pour in a blender together with milk and sugar process at blend for a minute
4. Flavour with bitters and serve with crushed ice
